Sencha is probably one of the best known green teas in Europe. Kabuse means that the tea has been in partial shade. A Japanese produced Sencha is a larger piece of needlework. Immediately after picking the fresh tea leaves, the leaves are cooled to approx. 5 degrees. Then the leaf is heat treated with steam to stop the fermentation.
