The grapes are harvested strictly by hand, and after destemming, the must is transferred to amphorae, where alcoholic fermentation will be initiated through a previously prepared pied de cuve and started with indigenous yeasts. Maceration on the skins is extremely short, lasting only six hours, while aging takes place in amphorae and lasts about 12 months.
